What factors influence the result of Falling Number for milling wheat? What is the international standard method for Falling Number test for milling wheat?

 Falling Number parameter reflects the activity of alpha-amylase enzyme in grain. The accuracy of Falling Number method depends on compliance with standard procedures. Many errors are  related to the human factor, which may influence the final results: 

  • The fractional composition of the flour does not meet the requirements of the standard (too coarse/too fine grinding or sieves with a smaller (larger) mesh are size used for sieving flour). 
  • Too high or too low temperature of water and flour. 
  • Short mixing time in the viscometer tubes. 
  • Insufficient  accuracy of  laboratory scales used for weighing of the sample. 
  • Moisture level of the sample is ignored. 
  • The water bath of the Falling Number device is not heated to the boiling point (the device is not operating in the required mode – the time for heating to be set as per manual). 
  • The paste immersion sensor is not properly synchronized.

Test Weight is the mass of 1 liter of grain, expressed in grams, or the mass of one hectoliter of grain, expressed in kg.

The analysis for Test Weight is done according to the standard GOST R 54895-2012: 'Grain. Method of determining test weight' or according to ISO 7971-3 standard.

What is the difference between tests for Bug Damage, made according to GOST and to  International standards? Why is the analysis performed  according to GOST?

 According to GOST, the analysis for Bug Damaged grains is carried out on two parallel samples (10 g. each). According to ISO 7970 analysis is carried out on the sample weighing 50-100 g.

In the international standard there is no separate fraction of "Bug Damaged grains", they take into account kernels, which are visually determined as damaged or eaten by pests or other insects. 

GOST 30483-97 Grain. Methods for determining the total and fractional content of foreign impurities and grain impurities; the content of pungent grains and grain size; the content of wheat grains damaged by bug-turtle; the content of metal impurities. Since there is a GOST with a detailed description, so use it if you need this indicator separately.

A survey report is a special report including all important information obtained during inspection of  the cargo, goods.
